Lush Savory Trio – Holiday Appetizer

For the next recipe in our Holiday Recipe Series, we’ve got a Lush Savory Trio, perfect for appetizers for holiday parties! The trio consists of Shredded Chicken Lettuce Cups with BBQ or Plum Sauce, Chicken Mushroom One-Bite Pastry Cups, and Prosciutto Wrapped Pear and Arugula Wraps.

Ingredients for the 3 bites (combined):

1. Whole BBQ CHICKEN
2. 3 tblsp whole flour
3. Mini Pastry Cups x 12
4. Baby Romaine Lettuce
5. Arugula bunch
6. Green ripe pears (2-3)
7. Proscuitto 8 medium thin slices. If they’re too thin they will tear.
8. Cremini / brown mushrooms
9. Plum or BBQ Sauce
10. Cream
11. ¼ cup fresh ricotta
12. Egg white x 3
13. Water chestnuts
14. Baby Spinach
15. Onion
16. Garlic
17. Chives
18. Chicken Stock
19. Olive Oil
20. Nutmeg
21. Seasoning

Method:

Chop pear into finger strips. Add lemon to a bowl with pears to prevent browning. Set aside.
First set the 12 mini pastry cups on a greased sheet tray and pre-heat oven to 350 degrees.
Make the chicken fillings for pastry Bites and mini lettuce cups.
Shred the whole roasted BBQ chicken into a mixing bowl. You can buy one if you’re hosting, preferably free range organic. Add to large frypan to the heat. Chop shallots, seasoning, water chestnuts and garlic finely. Keep a few water chestnuts for topping. Add to pan with nutmeg and olive oil and mix thoroughly. Cook until garlic and shallots are browned and soft. Add shredded chicken and chopped mushrooms. cook until whole mix is hot. Remove ½ chicken and transfer back to the mixing bowl. Add BBW or Plum sauce and mix well – set aside. To the pan, add fresh heavy cream and ricotta and cook for 3-4 mins until cream and ricotta melted and the chicken mix is creamy. Season to taste. Remove from heat.
Add creamy mix to the pastry and pop in the oven for 10 mins until lightly browned. Remove.

Preparation:

Creamy Chicken Mushroom Pastry Cups:
Chop chives super-fine & sprinkle on top of warm tarts. Pop on a serving platter.

BBQ Chicken Lettuce Cups:
Chop end of single leaves of mini lettuce leaves. Spoon a tablespoon of BBQ Plum chicken mix into each cup and top with finely sliced water chestnuts. Pop on platter.

Prosciutto Wrapped Arugula & Pears:
Take 3 pear fingers, a small bunch of arugula and places at end of slice of prosciutto, roll.
