Memorial Day Recipe: Red, White & Blue Galette

Memorial Day is the perfect time to bust out the grill, make a pitcher of sangria, and invite over your friends and family for a backyard BBQ. With summer creeping up on us and the warm nights getting long and longer, we thought it would be a great time to share one of our favorite desserts that’s a true showstopper! Galettes may look intimidating at first, but with a few simple ingredients, you can create a beautiful, rustic dish to complete your meal.

To make a galette, you can either use store bought pie crust, or make the pastry dough at home. We prefer homemade and trust us, it is much easier than you’d think!

To make the pastry dough you’ll need:

-1 ¼ cups all purpose flour

-1 tbsp granulated sugar

-¼ tsp salt

-½ cup (1 stick) cold unsalted butter, cubed

-4 tsp ice water

-1 tbsp lemon juice

Add the flour, sugar and salt to a food processor and pulse to combine. Add your cubed butter and pulse until crumbs form. While the blade is still running, slowly add in your ice water and lemon juice through the spout. Continue whirling the mixture until the dough comes together. It should not be sticky.

Preheat your oven to 375 and place a piece of parchment on the counter. Dust flour on the surface and transfer the pastry dough to the parchment. Using your hands, form the dough into a ball. Dust your rolling pin with flour and roll your dough into a 12 inch circle. The edges will be uneven and that’s totally fine! The more rustic looking, the better!

Now it’s time to make the filling! For the mixed berry filling you’ll need the following:

-½ cup packed brown sugar

-3 tbsp cornstarch

-⅛ tsp salt

-4 cups of mixed berries (We used sliced strawberries, raspberries and blackberries. Blueberries are a great option as well!)

-1 tsp coarse sugar (sugar in the raw)

Berry Galette Recipe

Combine your brown sugar, cornstarch and salt in a bowl. Add your selection of mixed berries and stir until berries are coated. Transfer the fruit mixture to the center of your pastry dough. Fold the dough over to cover the edge of the fruit. The center of the gallette will not be covered and the edges may be uneven. Continue until all of the edges are pinched and folder over. Lightly brush the pastry dough with water (or milk) and sprinkle your coarse sugar on top.

Bake for 35-40 minutes or until the pastry is golden and the berry mixture is slightly bubbling. Serve warm with a scoop vanilla ice cream and enjoy!
