Caramelized Onion Dip with Sweet Potato Chips

1 hour, 15 minutes  |  Serves 6-8

Wine Pairing: Vintner Sparkling Brut

  • 4 tablespoons olive oil
  • 3 yellow onions, diced
  • 1 ½ cups sour cream
  • 8 ounces cream cheese
  • 2 teaspoons worcestershire sauce
  • 2 tablespoons honey
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • 1 teaspoon minced chives
  • Sweet potato or vegetable chips

  1. Pour olive oil onto a 2 burner stovetop griddle, over as low of heat as your stove allows. Add in onions and let slowly caramelize over the course of 45 minutes – 1 hour, stirring occasionally, until they are light golden brown & somewhat translucent. They will reduce in volume by about half. Remove from heat and set aside.
  2. Set sour cream and cream cheese into the bowl of an electric mixer fitted with the paddle attachment, and mix on low speed until combined.
  3. Add in caramelized onions, worcestershire, honey, salt & pepper and hand mix together with a rubber spatula. Scoop into a mixing bowl and garnish with minced chives. Serve with vegetables or sweet potato chips.
