Ingredients:
  • 5 tablespoons olive oil, divided
  • 2 yellow onions, thinly sliced
  • 4 bratwurst sausages
  • 4 tablespoons salted butter
  • 8 slices artisan whole wheat bread
  • 4 tablespoons grainy Dijon mustard
  • 12 ounces white Stilton cheese with cranberries, crumbled
  • 1 (8 oz) jar roasted red bell peppers, thinly sliced
Instructions:
  1. Heat 3 tablespoons olive oil in a skillet over low heat and caramelize the onions for 45 minutes, stirring occasionally.
  2. Cook bratwurst in a separate skillet with 2 tablespoons olive oil, turning every 5 minutes until browned. Slice each sausage lengthwise into 3 pieces.
  3. Butter one side of each bread slice and spread Dijon mustard on the other side. Layer Stilton, sausage slices, roasted peppers, and onions between slices.
  4. Grill the sandwiches over medium heat for 5 minutes on each side, pressing gently with a spatula.

  • 48 ounces chicken broth

Instructions:
  1. Preheat oven to 450°F. Toss Roma tomatoes with 4 tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon pepper. Roast for 35 minutes.
  2. In a large soup pot, sauté onions in the remaining olive oil for 8 minutes. Add garlic and red pepper flakes, cooking for another 3 minutes.
  3. Add chicken broth, crushed tomatoes, roasted red peppers, and roasted Roma tomatoes. Simmer for 30 minutes.
  4. Stir in basil and cook for 5 more minutes. Allow to cool slightly, then blend until smooth. Adjust seasoning as needed.
