Summer Skewers
Makes 10-12 skewers
Prep Time: 50 minutes
Cook Time: 1 hour
Building skewers is a fun, interactive way to involve your family in the kitchen. This healthy, crowd-pleasing dish is great for kids and adults alike and is completely adaptable to suit your dietary needs or personal tastes. Mix up the meats, marinades, or fresh produce to create a seasonal dish that’ll always shine!
Don’t have access to a backyard grill? Looking to shake it up and make these later for a taste of summer, year-round? No problem! These tasty skewers are just as good cooked indoors with a stovetop grill pan or skillet.
Ingredients:
- 3 chicken breasts
- 1 ½ cups oil & vinegar salad dressing or marinade
- 1 red bell pepper
- 1 zucchini
- 1 yellow zucchini
- ½ red onion
- 8 ounces baby bella mushrooms (about 12)
- ½ pineapple, skinned
Instructions:
- Cut all ingredients into 1-in. squares or cubes. Try to keep the meat pieces all roughly the same size to ensure uniform cooking.
- Add the chicken and marinade to in a medium bowl and let it sit for at least an hour (if you’ve got more time, you can refrigerate this mixture for up to 24 hours). Remove the chicken from the refrigerator and let it come to room temperature before lighting the grill.
- Assemble skewers. Alternate between chicken and vegetables until you run out of ingredients.
- Lay the skewers on a hot grill and cook for about 10-15 minutes, rotating regularly to cook evenly.
- When the chicken reaches 165 degrees, remove your skewers from the grill and brush with chipotle BBQ sauce (recipe below).
- Enjoy!
Chipotle BBQ Sauce
Makes 6 cups
Total Time: 10 minutes
This smoky chipotle sauce is the perfect pairing for a dry Pinot Noir. Once your skewers are fully cooked, brush them generously with this delicious sauce (and don’t be afraid to get a little messy!) for a savory treat you’ll crave again and again.
Ingredients:
- 2 cups brown sugar
- 2 cups ketchup
- ¾ cup red wine vinegar
- ½ cup water
- 2 tablespoons Worcestershire sauce
- 2 tablespoons dry mustard
- 2 teaspoons paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 chipotle pepper
Instructions:
- Combine all ingredients in a blender or food processor and blend until smooth.
- Brush over fully cooked skewers and enjoy!
